Method

 

Add the sugar and water to a rocks glass, then stir to dissolve. Add orange zest. Slowly trickle in Grey Goose and cubed ice, piece by piece, stirring throughout. Top with cubed ice to serve.

Light Brown Sugar 200g
Caster Sugar 60g
Gingerbread Spice 10g (ginger powder, cinnamon powder, allspice, cloves and nutmeg)
Eggs 50g (about 1 egg)
Milk 15ml
All-purpose flour 400g
Baking Powder 6g

Method

 

Preheat the oven to 180 degrees Celsius In a large bowl, soften the butter, add both the sugars and gingerbread spice, and cream together. Add the egg and milk and combine completely. Sift in the flour and baking powder, and mix till just combined. Do not overmix.

Castor sugar 30g
Mascarpone cheese 150g
Whipped cream 50g
Baileys  15ml
Cooled espresso 1.5 cups
Ladyfingers 2 packs
Cocoa powder to garnish

Method

 

Mix egg yolks and castor sugar over a double boiler to make the sabayon. Gently fold in sabayon, mascarpone cheese, and whipped cream to create a smooth mixture. Soak the ladyfingers in a mixture of coffee and baileys. Arrange soaked fingers in a ramequin and cover them with the sabayon, mascarpone cheese, and whipped cream mixture. Place it in the chiller to set for 90 minutes. Garnish it with cocoa powder and ladyfingers.

Yoghurt 10g
Baking Powder 0.5g
Castor Sugar 15g

Method

 

Mix refined flour, baking powder, yogurt, castor sugar, oil, and vanilla essence in a cake

mixer on medium speed for 5 minutes till all the ingredients are well mixed to form a smooth

batter. Preheat the oven to 150’C. Grease the cupcake mold and pour the mixture evenly into it. Bake the cupcake for 15 minutes. Mix buttercream, white chocolate, and red gel color and pour into pipping bag. Once the cupcakes are done remove them from the oven and let them cool for 30 minutes. Garnish with snowballs.

Butter melted then cooled ½ cup (113g)
Eggs, room temperature 2
Vanilla 1 tsp
Granulated sugar 1 cup (200g)
Unsweetened cocoa powder, sifted ⅓ cup (40g)
All-purpose flour ½ cup (64g)
Salt ¼ tsp
Mini marshmallows 1 cup
Chopped walnuts ½ cup
Chocolate chips 1 cup
Baking powder ¼ tsp

Method

 

Preheat oven to 350°F. Melt butter and set aside to cool slightly. In a medium bowl, beat two eggs with the vanilla. Add in sugar, cocoa powder, flour, salt, and baking powder, and gently stir. Pour the melted butter into the brownie mixture and mix until the butter is fully incorporated. Spread batter in a prepared 8-inch square pan. Bake 18-22 minutes. Remove from oven and add chocolate chips, marshmallows, and walnuts. Bake until the chocolate is shiny and the marshmallows puffed.

Roasted Duck

Duck -
Butter -
Yogurt -
Ginger paste -
Garlic paste -
Cooking oil -
Coriander powder -
Cumin powder -
Cardamom powder -
Kasturi methi -
Red chili powder -
Red chili paste -

Method

 

Take a duck and rinse it thoroughly. Now, prepare the paste that the duck will be marinated with.

In a pan, take some oil and add a spoonful of ginger-garlic paste. Let the paste sizzle thoroughly and then add red chili paste. Once done, add coriander powder, cumin powder, cardamom powder, and red chili powder. Mix thoroughly and add crushed kasturi methi in it to add more flavor to it. Now let it cool and then add some fresh yogurt. Mix it well and marinate the duck with this flavorful paste. Now let this marinated duck set in for 3-4 hours in the fridge. Then roast it for 25 minutes in the oven at 180 degrees and your hot sizzling roasted duck is ready.

Fresh thyme -

Method

 

Take a turkey, clean it properly and dip it in brine water for 2-3 hours. Take a saucepan and melt the butter. Add lemon zest, lemon juice, and thyme according to the weight of the turkey. Apply the marinated butter and stuff onions, garlic, malta oranges, fresh thyme, and black pepper inside the turkey skin. Roast the loaded turkey for 25-30 mins at 180 degrees and now your loaded roasted turkey is ready to serve.

Crab meat (shredded) 60g
Onion (finely chopped) 25g
Garlic (finely chopped) 15g
Celery (finely chopped)  15g
White sauce 35g
Fresh cream 50ml
Parmesan cheese 15g

Pepper to taste
Crab shells 3
Olive oil 15ml

Method

 

For stuffing 

 

In a pan, heat oil and sweat chopped garlic, onion, and celery. Add shredded crab meat and sauté for a minute or two. Add white sauce and fresh cream and continue cooking on a low flame for 2 minutes. Season with thyme, salt, and pepper. Finish with grated Parmesan cheese. 

 

Baked Crab

 

Clean and blanch the crab shells, spoon the stuffing into the shells, sprinkle Parmesan cheese on top, and grill in the salamander until the cheese melts and turns golden brown.
